UHT, or Ultra High Temperature processing, is a modern food preservation technology that heats liquid products to 135–150°C for just 2–5 seconds.
This process effectively destroys harmful microorganisms while preserving nutritional quality and taste. Products are then filled into aseptic packaging, such as Tetra Pak cartons or sterile bottles,
allowing them to be stored for 6–12 months without refrigeration.
The benefits of UHT processing include extending the shelf life of products without the need for refrigeration while ensuring safety from pathogens and spoilage microorganisms.
The process preserves the natural taste of the product due to the short heating time, which also minimizes the loss of nutritional value. Additionally,
UHT helps reduce storage and transportation costs since cold chain logistics are not always required.
